STUFFED CHEESY PESTO PARATHA

A delicious stuffed flatbread with basil pesto, mozzarella cheese, spinach and paneer. A quick and yummy meal to make.

Ingredients

  • 2 cups Whole wheat flour
  • ½ tsp Salt
  • 1 tbsp Olive oil
  • ½ cup Basil pesto
  • 1 cup Mozzarella cheese
  • ½ cup Spinach thinly sliced
  • ½ cup Paneer grated
  • 1 tsp Salt
  • 1 tsp Pepper powder

Instructions

Making the dough

  • In a mixing bowl add whole wheat flour, salt, olive oil and give it a mix.
  • Gradually add in water and make a soft dough similar to that roti dough.
  • Cover and let the dough rest for 10 minutes.

Preparing the stuffing

  • In a mixing bowl add sliced spinach, grated paneer, grated mozzarella cheese, salt and pepper powder and give it a good mix.

Let's make some parathas now

  • Take the dough and divide it into 6 to 8 equal parts and make dough balls out of it.
  • Now take one ball of dough, coat it into the dusting flour and Roll the ball into the small circle.
  • Take two spoonfuls of pesto and smear it on the rolled dough circle.
  • Now place 3-4 tbsps of stuffing on the rolled dough smeared with pesto.
  • Now collect the edges of the circle, seal and make a ball, press it little and give a shape of the small flat circle.
  • Coat it again with dusting flour and roll it out gently and give a circular shape like a regular thick roti or paratha.
  • Place it on a heated tawa/griddle and cook on medium flame. When you see tiny bubbles rising on the surface, turn it over.
  • Brush/smear ½ teaspoon oil around its edge on both sides with the help of spatula and cook for a minute each side. Repeat flip and cook process until light brown spots appear on both sides.
  • Stuffed cheesy pesto paratha is all ready now. Serve warm with a dusting of parmesan cheese.

Notes

  • If you're packing these parathas for lunchbox make sure to wrap them in foil to keep it warm.
  • You can also chilli flakes to the stuffing if you like it bit spicy.
  • You can also add in grated veggies of your choice like Grated broccoli, and more fresh herbs can be added too.
