- 1 tbsp Coriander seeds
- 10 Fenugreek seeds
- 8 Whole dry red chillies
For tempering
- 3 tbsp Cooking oil
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- ½ tsp Turmeric powder
- 2 tbsp Chana dal/Bengal gram dal
- 3 tbsp Peanuts
- 1 sprig Curry leaves

Making peanut spice mix
Heat a skillet, add peanuts and dry roast on medium flame until they are evenly golden brown.
Transfer the roasted peanuts to a plate to bring them to room temperature. Later remove the husk of peanuts.
Now add fenugreek seeds, coriander seeds and roast on low flame until they are nice golden brown. This may take around 2 minutes on medium flame.
Keep the roasted seeds aside. Add a tbsp of oil to the pan, add torn red chilies and roast for a minute or two.
Transfer all the roasted spices and peanuts to a blending jar and pulse them to a semi-coarse powder. Keep the peanuts a bit chunky similar to breadcrumbs.
