NUVVULA SADDHI

A delicious and healthy sesame seed flavored rice with spices and a crunchy tempering makes a great meal on its own.

Ingredients

  • 4 cups Cooked rice

For the sesame seed spice mix

  • ½ cup Sesame seeds
  • ½ tsp Fenugreek seeds
  • 2 tbsp Coriander seeds
  • 5 Whole dry red chillies

For tempering

  • 3 tbsp Cooking oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • 3 tbsp Peanuts
  • 4 Whole dry red chillies
  • 1 sprig Curry leaves
  • ½ tsp Turmeric powder

Instructions

Making of sesame seed spice mix

  • Dry roast sesame seeds, fenugreek seeds, coriander seeds and transfer them on a plate aside.
  • Now add a tsp of oil and roast torn red chilies and place them along with other roasted spices.
  • Once the roasted spices have cool down to room temperature, blend these spices to a semi-coarse powder.

Make a tempering

  • Heat a skillet or tadka pan, add oil and once its hot add in mustard seeds, cumin seeds and let them splutter.
  • Now add in peanuts and fry until they turn golden brown.
  • Later add in torn red chilies, curry leaves, turmeric powder and fry for a minute or two.
  • Turn off the stove and keep the tempering aside.

Let's make Nuvvula saddhi/sesame seed flavored rice now

  • In a mixing bowl or wide plate spread out the cooked rice and let it come down to room temperature.
  • Add in prepared sesame seed spice mix, salt and give everything a good mix.
  • Now add in tempering and mix until everything is completely incorporated.
  • Serve the prepared Nuvvula saddhi/sesame seed flavored rice along with yogurt and fryums.

Notes

  • You can also use black sesame seeds for making this rice.
  • Although traditionally we don't add any lentils in making the spice mix, you can add in chana dal, urad dal to make it more nutritious and flavorful.
