CARROT KALE STIR FRY

A delicious side dish made of carrots, kale and chickpeas and flavored with Indian spices.

Ingredients

  • 3 Carrots peeled and chopped
  • 5 leaves Kale finely chopped
  • 1 cup Chickpeas boiled
  • 5 cloves Garlic
  • 2 tbsp Cooking oil
  • ½ tsp Cumin seeds
  • ½ tsp Turmeric powder
  • 1 tsp Red chilli powder
  • Salt to taste
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander

Instructions

  • Heat a skillet, add oil and once its hot add in cumin seeds, minced garlic and toast the garlic until it turns golden brown.
  • Now add in chopped carrots and fry on high heat for 2 mins.
  • Time to add in finely chopped kale, chickpeas and roast everything for a minute.
  • Now add in spices turmeric powder, red chili powder, salt, ground cumin, ground coriander and give it a good mix.
  • Cover the skillet and cook for 3-4 mins on medium heat.
  • Taste and adjust the seasoning to your taste preference.
  • Serve warm carrot kale stir fry as a side dish with rice or roti.
