CARROT KALE STIR FRY
A delicious side dish made of carrots, kale and chickpeas and flavored with Indian spices.

- 3 Carrots peeled and chopped
- 5 leaves Kale finely chopped
- 1 cup Chickpeas boiled
- 5 cloves Garlic
- 2 tbsp Cooking oil
- ½ tsp Cumin seeds
- ½ tsp Turmeric powder
- 1 tsp Red chilli powder
- Salt to taste
- 1 tsp Ground cumin
- 1 tsp Ground coriander
Heat a skillet, add oil and once its hot add in cumin seeds, minced garlic and toast the garlic until it turns golden brown.
Now add in chopped carrots and fry on high heat for 2 mins.
Time to add in finely chopped kale, chickpeas and roast everything for a minute.
Now add in spices turmeric powder, red chili powder, salt, ground cumin, ground coriander and give it a good mix.
Cover the skillet and cook for 3-4 mins on medium heat.
Taste and adjust the seasoning to your taste preference.
Serve warm carrot kale stir fry as a side dish with rice or roti.
