Saddhi is a type of flavored rice made in Telangana region. Putnala pappu/Roasted bengal gram dal is very flavorful as it has slight nutty taste whereas the raw tastes bitter. These are considered to be good for people with diabetes and cholesterol as it is low in cholesterol and rich in fiber zinc etc.,

INGREDIENTS
Cooked rice – 1 1/2 cup
Roasted bengal gram dal – 1/2 cup
Bengal gram dal – 1tbsp
Peanuts – 1/4 cup
Urad dal – 1 tbsp
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Turmeric powder – 1/2 tsp
Oil – 2 tbsp
Curry leaves – 1 sprig
Cilantro – 1 tbsp, finely chopped
Green chilli – 4 no, slit into half
Red chilli – 2 no
Salt – to taste
PROCEDURE
- Take the roasted bengal gram dal and blend into fine powder and keep aside
- Now heat a wide pan and add oil, heat it on medium flame
- Once the oil is hot enough add in mustard seeds, cumin seeds and let them crackle
- Now add in the peanuts and let it fry for a minute
- Then add in bengal gram dal/chana dal, urad dal and fry for a minute
- Now add in green chillies, red chillies, curry leaves and fry until peanuts looses its rawness/turn into golden brown
- Add turmeric powder and salt and mix well
- Now add in the cooked rice and mix well and turn the heat to low
- Add the roasted bengal gram dal powder to the rice and mix well and cover the pan and cook on low flame for 5 minutes
- Finally add the chopped cilantro and serve as it is or along any gravy curry like aloo korma
FEW TIPS
- This recipe tastes great with leftover rice, incase you are using freshly cooked rice do not forget to transfer the cooked rice to a wide plate and let it cool to loose some moisture and dry.
- You can also add in cashews to increase the richness of this dish, as I kept it simple as original
