Nuvvula saddhi, a delicious flavored rice with roasted sesame seed powder, spices and rice. A sesame seed flavored rice which is a traditional recipe of Telangana made especially for Bathukamma as an offering for Goddess GOWRI on Saddhula Bathukamma.
Bathukamma, is a beautiful floral festival of Telangana. A nine day festival celebrated by married women, starting from Petra amavasya and concludes on ninth day ie., on Ashwayuja Durgashtami and we call the last day of Bathukamma celebrations as SADDHULA BATHUKAMMA. On this last day five or nine types of Saddhulu are offered to GOWRAMMA THALLI(Goddess Gowri Devi) and send her off with great pomp and pray to Goddess to arrive soon next year.
This Nuvvula saddhi is quite a traditional and common recipe made for Saddhula bathukamma. Sesame seeds are roasted along with fenugreek seeds, coriander seeds, dry red chilies. Later powdered to a chunky consistency and mixed in cooked rice. Finally tempered with mustard cumin seeds, peanuts, curry leaves and chillies. Sesame seeds have a predominant role in Telangana cuisine, it not only features in daily cooking yet festive meals too. NUVVULA SADDHI
Ingredients
- 4 cups Cooked rice
For the sesame seed spice mix
- ½ cup Sesame seeds
- ½ tsp Fenugreek seeds
- 2 tbsp Coriander seeds
- 5 Whole dry red chillies
For tempering
- 3 tbsp Cooking oil
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 3 tbsp Peanuts
- 4 Whole dry red chillies
- 1 sprig Curry leaves
- ½ tsp Turmeric powder
Instructions
Making of sesame seed spice mix
- Dry roast sesame seeds, fenugreek seeds, coriander seeds and transfer them on a plate aside.
- Now add a tsp of oil and roast torn red chilies and place them along with other roasted spices.
- Once the roasted spices have cool down to room temperature, blend these spices to a semi-coarse powder.
Make a tempering
- Heat a skillet or tadka pan, add oil and once its hot add in mustard seeds, cumin seeds and let them splutter.
- Now add in peanuts and fry until they turn golden brown.
- Later add in torn red chilies, curry leaves, turmeric powder and fry for a minute or two.
- Turn off the stove and keep the tempering aside.
Let's make Nuvvula saddhi/sesame seed flavored rice now
- In a mixing bowl or wide plate spread out the cooked rice and let it come down to room temperature.
- Add in prepared sesame seed spice mix, salt and give everything a good mix.
- Now add in tempering and mix until everything is completely incorporated.
- Serve the prepared Nuvvula saddhi/sesame seed flavored rice along with yogurt and fryums.
Notes
- You can also use black sesame seeds for making this rice.
- Although traditionally we don't add any lentils in making the spice mix, you can add in chana dal, urad dal to make it more nutritious and flavorful.
