Kobbari laddu(coconut and jaggery laddu) is a quick sweet made with freshly grated coconut and jaggery. It can also be made with sugar as well. I used jaggery as it is rich in iron and good for health.
We can also use desiccated coconut powder instead of fresh coconut and also add some khoa and condensed milk to enhance the richness of the dish.
Ingredients
Freshly grated coconut 1 cup
Jaggery powder 1 cup
Cardamom 1-2
Ghee 2 tsp
Procedure
- In a heavy thick bottomed pan add freshly grated coconut and saute on medium flame for 5 mins
- Crush the cardamom and add it to the sautéed coconut.
- Then add the grated jaggery and mix well until coconut and jaggery melts and combines well
- Saute on low to medium flame for 15-20 min until the rawness of coconut is gone and mixture turns crumbly
- Off the flame and keep it aside to cool for 5-10 min
- Grease the palms with ghee and take a handful of mixture and roll tightly into small lemon sized balls
Few Tips
- You can substitute the jaggery with sugar or brown sugar as well
- Add in 1/4 cup khoa or condensed milk to enhance the taste and richness
- You can also add in some dry fruits to add some nutty flavor and texture
