Egg Methi Malai is a rich and creamy curry made using fresh fenugreek leaves or methi and Hard boiled eggs. This is absolutely a creamy and luscious curry, which is packed with the goodness of greens, Eggs. It is one of the variation of the most popular curry METHI MATAR MALAI, that is on the menu of almost every North Indian restaurant.
You’d never this dish on the menu of any North Indian restaurant or Dhaba.The taste of Dhaba Style Methi Malai Matar is different altogether, as they use fresh methi and malai to make this recipe, and cooking on coal stove elevates the taste even more.
This is absolutely loved by kids as you cannot taste the bitterness of methi in this creamy curry and you get the goodness of Eggs too. Along with Methi and Cream, Eggs elevates the taste and richness.
Methi might be slightly bitter in taste, but there numerous health benefits by consuming this green leafy vegetables, it is very essential to include this in our daily diet. Methi or Fenugreek Leaves helps in reducing cholesterol, lowers the risk of heart disease, helps in losing weight, and improves digestion, thus including methi in your everyday diet is very beneficial.

So, if you’re following me on Instagram @mycurryveda, you’ll know how me and my friends are trying each other’s recipe for a fun initiative called #tryandtaste. And this recipe is by my dear friend Danika @dine_with_danika , the moment she posted her EGG METHI MALAI recipe I knew that I needed try it soon and hence tried my hands at it, with very minor changes.
Can I skip the eggs??
Absolutely, you can replace the eggs with Green peas to make the Classic METHI MATAR MALAI or use use Paneer along to make METHI MALAI PANEER. To make the METHI MATAR MALAI, use fresh green peas. But if they are not in season, you can use the frozen ones too.
This is perfect recipe in winter, as you will get both fresh methi and matar in the market. It is said that Methi helps us keeping our bodies warm during winters.
How can I make this VEGAN ??
You can make this vegan by omitting the dairy products here like I used cream and Eggs. You can replace the cream with Cashew paste or coconut milk or a mix of both. Eggs can be replaced by TOFU or Green peas or sweet corn etc.
What goes best with EGG METHI MALAI ??
Methi Malai Matar tastes great with almost every Indian Bread such as Naan, Parathas, Phulka, Roti or any of your favorite flatbreads. It also tastes great with plain steamed Rice, Jeera Rice, or any other Pulao. We have devoured this delicious curry with some Flaky “KALONJI & MICROGREENS LACCHA PARATHA“.

STUFFED PEPPERS IN CREAMY TOMATO GRAVY
MAMIDIKAYA PAPPU/RAW MANGO LENTIL STEW
EGG METHI MALAI
Ingredients
- 4 Eggs hard boiled
- 1 cup Methi / Fresh fenugreek leaves
- 1 Onion medium
- ¼ cup Cashews
- ¼ cup Cream
- ½ cup Whole milk / Full fat milk
- 2 tsp Red chilli powder
- Salt to taste
- 1 tsp Coriander powder
- 1 tsp Garam masala
- 2 tbsp Kasuri methi
- 1 tsp Pepper powder
- 1 tsp Cumin powder
- ½ inch Ginger
- 2 cloves Garlic
- 6 tbsp Oil
- 1 cup Water
Instructions
Sautè the Eggs
- Peel and Prick the hard boiled eggs with a fork or knife and keep aside.
- Heat a skillet, add oil, once its hot add in tsp of chilli powder, tsp of turmeric powder, pinch of salt, Hard boiled eggs.
- Keep stirring them and sautè on medium flame for 3 minutes or until it turns golden brown on all sides.
Making the curry
- Heat a frying pan/skillet and add oil, then add chopped ginger, chopped garlic, sliced onions, cashews and fry them until they turn golden brown.
- Turn off the stove and let this cool down and come to room temperature.
- Transfer them a blending jar and blend them to a smooth paste and Keep it aside.
- Heat a wide pan and add oil, once it's hot add the pepper powder, cardamom, chilli powder, salt, coriander powder, cumin powder and fry for a minute.
- Then add in the washed methi leaves and onion cashew paste and give it a good mix and cook until the oil starts leaving sides.
- Now add in cream, milk and give it a nice stir until everything is completely incorporated.
- Now add in Sautèed hard boiled eggs and cook covered for 5 minutes.
- Finally add in garam masala, crushed kasuri methi and serve warm with some Roti or Rice. Bon appétit.
