A healthy yogurt based cucumber salad made in Telangana and Andhra region. A subtle hint of pungent taste from mustard seeds and creamy taste of freshly grated coconut in this raita makes it more unique. Pachadi/Raita are served along with white rice, roti’s or pulao.
This dish is very healthy and helps in cooling our body. Cucumber helps in relieving indigestion and constipation and it is a good source of vitamin c and fiber. Freshly grated coconut is good source of potassium and fiber. Mustard seeds are rich source of magnesium, calcium and dietary folate. This is my one of goto recipe’s when I have to make something quick and healthy.
Ingredients
Cucumber 1 medium sized
Mustard seeds 1 tsp
Freshly grated coconut 1 tbsp
Curry leaves 5-6
Green chillies 1 no
Salt to taste
Cumin seeds 1 tsp
Yogurt 1 cup
Cilantro/coriander leaves 1 tbsp
Oil for tempering
Procedure
- Peel and chop the cucumber to small cubes or you can also grate it.
- In a small mixie jar add in the 1/2 tsp mustard seeds, 1tbsp freshly grated coconut, 1 green chilli and grind them to a fine paste. (I used mustard seeds powder here, as I have it prepared)
- In a mixing bowl add in the yogurt and whisk until smooth consistency
- Add in the grinded paste, cucumber(grated or cubed) and salt to the whisked yogurt and mix well
- Heat a tempering pan and add oil, once the oil is hot enough add in mustard seeds, cumin seeds and curry leaves and let it splutter.
- Add the made tempering to the yogurt mix and finely chopped cilantro leaves.
- Serve along with rice or roti’s.
Few Tips
- You can also add in grated carrot to increase the nutritional value of the dish
- You can skip adding the green chilli and use pepper powder instead, to make it kid friendly
- Serve it chilled, it tasted better
