Carrot Kale stir fry is a humble side dish with carrots, kale and chickpeas. It makes a great accompaniment with rice or Indian flatbreads. This easy Indian Spiced Veggie stir fry is great to use up all the veggies from the refrigerator. Chop them all to somewhat similar size, roast up the spices, add veggies and cook until done.
I love Kale, not just for the health benefits but the earthy flavor is provides. I try to include in my diet as much as possible. This carrot kale stir fry is one of the easiest recipes you’ll ever make. It’s delicious, nutritious, and super healthy. Quick dinners are something everyone needs more of, and stir fry’s are the perfect solution. This one is full of kale, chickpeas and carrots, making it rich in antioxidants and nutrients. Kale is one of my favourite winter leaves to include in my diet, and a stir fry is the perfect way to enjoy it.
What all Ingredients do we need in this recipe?
- Carrots – You can use any firm root vegetable like beetroots, potatoes, sweet potatoes, etc.
- Kale
- Chickpeas – these are optional, but if you have any canned beans like navy beans, black beans, kidney beans, etc. feel free to substitute the chickpeas
- Garlic
- Olive oil
- Spices – I have used red chili powder, salt, turmeric powder, ground cumin, ground coriander in this recipe. You can alternatively use pepper powder, salt, cayenne instead or any curry powder if you have.
I came up with this dish, when I had just three ingredients leftover in my refrigerator, carrots, kale and some boiled chickpeas. Besides, you can add, change, or replace any ingredients you want to and customize this delicious side dish to taste.

This humble and healthy carrot kale stir fry makes a great accompaniment with rice or rotis. You can use it to make burrito bowl, or as a taco fixing. The options are just endless.

CARROT KALE STIR FRY
Equipment
- Skillet
Ingredients
- 3 Carrots peeled and chopped
- 5 leaves Kale finely chopped
- 1 cup Chickpeas boiled
- 5 cloves Garlic
- 2 tbsp Cooking oil
- ½ tsp Cumin seeds
- ½ tsp Turmeric powder
- 1 tsp Red chilli powder
- Salt to taste
- 1 tsp Ground cumin
- 1 tsp Ground coriander
Instructions
- Heat a skillet, add oil and once its hot add in cumin seeds, minced garlic and toast the garlic until it turns golden brown.
- Now add in chopped carrots and fry on high heat for 2 mins.
- Time to add in finely chopped kale, chickpeas and roast everything for a minute.
- Now add in spices turmeric powder, red chili powder, salt, ground cumin, ground coriander and give it a good mix.
- Cover the skillet and cook for 3-4 mins on medium heat.
- Taste and adjust the seasoning to your taste preference.
- Serve warm carrot kale stir fry as a side dish with rice or roti.
