Can I use Jaggery instead of Sugar?
Absolutely. That would make this halwa even more nutritious and divine.
Can I alter or reduce the amount of Ghee?
Any recipe can be made healthier.Do not reduce ghee more than 1/2 Cup, it will alter the dish way too much.
How can I make this recipe diet-friendly?
I wish I could tell you that you could make this recipe as delicious as this in diet friendly variation. As the main essence of this dish is ghee, you’ve to skip out using that and instead dry roast the whole wheat flour which in turn is not gonna taste exactly the authentic recipe is.
Can I make this plant-based or vegan??
For Plant-based – Yes you can, in recent days there are many plant based butters available and you could use that to roast the flour.
For vegan – Substitute the whole wheat flour with any gluten free flour like oat flour/quinoa flour and roast the flour either in plant-based butter or simply dry roast.
AATE KA HALWA/ WHEAT FLOUR PUDDING

Ingredients
- 1 cup Whole wheat flour
- 2 tbsp Semolina / Sooji optional
- 1 cup Water
- 1 cup Sugar / Jaggery
- 1 cup Ghee / Clarified butter
- 2 Cardamom pods optional
Instructions
- Heat a wok/Kadai in Low- Medium Heat, add ghee and once it's melted add in sooji and roast for 2 minutes.
- Meanwhile,in the saucepan bring the water,Cardamom pods and sugar together to boil.Switch off once it boils.
- Now add in whole wheat flour and keep stirring and roast on low-medium flame until it turns Golden brown(almost similar to biscuit colour).It takes about 15 minutes.
- Now carefully add half of the sugar syrup to the wok and keep stirring until it's completely absorbed.
- Now add the other half of the syrup and keep stirring and cook until the ghee oozes out and leaves the pan. That's when it is ready to serve.
- Serve warm topped with nuts and toppings of your choice.
Notes
- Stirring – This recipe needs quiet a muscle strength as we need to keep stirring continuously. Those 25 minutes are hands you have to dedicate to making this dessert without any disturbance.
- It takes a minute of difference for roasting and going to burn the flour. So keep an eye on it and as soon as you start smelling the nutty aroma lower the flame.
- While adding the sugar syrup to the pan, move a step back add and keep stirring, as adding the syrup it starts spluttering and steam takes over the pan sp be careful while doing that.
- Make the Sugar syrup in a pot with a long handle.This will help when you mix the syrup and Flour together.
- Use organic or homemade ghee for best results.
