So, after seeing many Granola tarts on Instagram and I wanted to make something similar for myself. I love homemade granola and the recent overnight oats and smoothie bowl craze has not even left me. I started loving this healthy and delicious breakfast smoothie bowls, overnight oats and made it to my routine.
I must say this is indeed a healthy and delicious dessert for breakfast and will be the perfect for weekend brunches or also will be great for get together parties as a dessert. Please do give a try and let me know your feedback.
So, let’s get started with the ingredients and process for 2 tarts and I have used 4 inch tart molds.
INGREDIENTS
FOR TART
Oats 1/2 cup
Flax seeds 1/4 cup
Pumpkin seeds 2 tbsp
Sunflower seeds 2 tbsp
Chia seeds 1 tbsp
Walnuts 4-5
Cashews 4-5
Almonds 4-5
Pitted Dates 10
Coconut oil 2 tbsp
FOR FILLING
Greek yogurt 1 cup
Sweetener 1/2 cup( I used maple syrup)
Fruit toppings of your choice
PROCESS
1. Preheat the oven to 350°F/180°C.
2. Now in a blender coarsely pulse the oats, flaxseeds, pumpkin seeds, sunflower seeds and transfer to a mixing bowl.
3. Now add chopped dates, cashews, almonds, walnuts to the blender and blend until everything comes together and later transfer to the mixing bowl.
4. Now add the melted coconut oil and mix properly until everything comes together.
5. Now take a handful of mixture and place it in the tart mold and press with the help of back of spoon/using your fingers and press firmly into the pan. Repeat for both the molds.
6. Place the tart molds in a baking tray and place in the preheated oven and bake for 20 min.
7. Then place the baked tart molds on a cooling rack for 10-15 mins until cool down to room temperature.
8. Meanwhile till the molds cool down, in a bowl add the greek yogurt and whip it a little with a spoon and add the sweetener of your choice and chill in the fridge for 5-10 min.
9. When the tarts have cooled down completely, remove the tart shells from the mold and add the whipped greek yogurt into the tart shell and spread it evenly.
10. Add toppings of your choice, like fresh cut fruits, nuts etc.,
