Who doesn’t love waffles with crunchy on the outside and yet soft on the inside with interesting patterns, which can awake the kid in every human being. I still remember the first time I was introduced to the waffles, when I came to the States for the first time and wasn’t familiar with it back in India as it is very famous now these days. It was so fascinating and I fell in love with textures instantly.
Grated Purple sweet potato 1/4 cup
Shredded Zucchini 1/4 cup
Kale 2 leaves (massaged and chop finely)
Buttermilk 1/2 cup
Olive oil 2 tbsp
PROCEDURE
1. In a blender add rolled oats, flaxseeds, hemp hearts and pulse it to a coarse texture.
2. Now in a mixing bowl add shredded veggies, pulsed oats mixture, beaten eggs, spices, finely chopped kale and mix everything together.
3. Now add in 1/2 cup of buttermilk, oil and give a nice whisk and keep it aside for10-15 min.
4. Now heat the waffle pan and spray with cooking oil and pour a ladle full of batter in each cavity(I had 2 waffle slice maker, so I used 2 ladles for both of them)
5. Close the lid and cook for 5-8 mins until golden brown and repeat the process for remaining batter.
6. Serve warm with sauce of your choice, I have tzatziki sauce here.
TIPS
1. You can customize the veggies according to your choice
2. You can replace the olive oil with butter/coconut oil.
3. You can also replace the regular egg with flax-meal egg to make it vegan and more nutritious.
4. Also some hot sauce or sriracha sauce, or pesto with sour cream also makes a great topping sauce for this.
