Godhuma nooka Sheera or halwa is a traditional Indian pudding made with broken wheat, ghee, sugar/jaggery, nuts and raisins. This quick, easy and simple delicious dessert has a soft texture with divine flavors of cardamom & ghee. This halwa is made in many regions of India with more or less the same ingredients & similar method and known by Fada lapsi in northern part of India.
This sheera has all the healthy goodness of ghee (which is an ultimate superfood), cracked wheat, jaggery/sugar, dry fruits, and cardamom powder. The tempting flavors of this toothsome dessert will surely make you and your loved ones drool.
This sheera is usually made as an offering to Indian Gods and Goddesses on some auspicious occasions, and for puja (a prayer ritual performed by Hindus towards devotional worship to deities).
What is Godhuma nooka sheera and how it is made?
Godhuma nooka sheera/Lapsi, a very delicious pudding made using broken wheat which is generally made on auspicious occasions and festivals in the Indian states of Gujarat, Rajasthan and Maharashtra. This is an easy to make, quick, simple, and earthy dessert. You don’t need any fancy ingredients or utensils for making this humble dessert.
In this dessert broken wheat aka Dalia is roasted with ghee until golden in color. Roasting the cracked wheat in ghee gives this Lapsi a rich and classic brown color, intense aroma, and a delicate flavor.
After roasting it is cooked/boiled in water until soft and sweetened with some sugar/jaggery, flavored with some roasted nuts and cardamom.This is one of such timeless recipes which is adored by people of all age groups.
I have made this in an old fashioned way by using jaggery instead of sugar, a healthier than the sugar version of sheera.
What are the other names of lapsi?
Lapsi or Laapsi has other names such as Lapsi Halwa, Fada ni Lapsi, Meethi Dalia / Sweet Dalia, Lapsi Sheera, godhuma nooka sheera, Cracked Wheat Dessert/Halwa etc.,
How to cook this Godhuma nooka sheera?
Cooking this sheera is very simple and easy. By roasting the broken wheat with desi ghee and then boil it in milk/water until soft and moist.
This recipe is passed to me by my Amma. She uses a stovetop version, which is very easy. You can also make it in a pressure cooker, as it reduces the cooking time. No matter whatever cooking method you adapt, this sure will win your heart.
What is meant by broken wheat?
Broken wheat is a name for whole raw wheat grains which are cleaned and then processed coarsely. Broken wheat is also known as Cracked wheat which is made of whole wheat grain.
This grain is usually known as Dalia Hindi. Samba rava, godhuma rava are few other names of broken wheat.
Broken wheat also is known as bulgur or bulghur wheat in the Middle East. It also has similar health benefits as quinoa.
Is Cracked Wheat Healthy and is it same as the whole wheat?
Yes, cracked Wheat is definitely healthy. Whole grains like cracked wheat Broken wheat/dalia provide fibers, protein, vitamin B6, iron, and antioxidants. No, they are not. Whole wheat always has a whole grain, whereas cracked wheat is crushed and has small amounts of the bran.
Can you make this plant based??
Yes absolutely, skip out using ghee and adopt dry roast method. Substitute the whole milk with any plant based milk and you’re all set to devour.
Can you make this completely vegan??
Unfortunately as the cracked wheat isn’t gluten free, so you cannot make this exact and complete recipe vegan. But there’s a workaround you can substitute the cracked wheat with quinoa.
Instead of using Whole milk use any plant based milk, skip out the ghee and adopt dry roast method instead.

Equipment
- Pressure cooker ( if you're using pressure cooker method)
- Wok
Ingredients
- 1 cup Cracked wheat
- 1 cup Jaggery
- 10 Cashews
- 1 Cardamom
- ½ cup Ghee
- ½ cup Milk
- 1 cup Water
- 10 Raisins
Instructions
Pressure cooker method
- Heat the pressure cooker, add ghee and dry roast the cracked wheat on medium flame until it turns golden brown and smells nutty and aromatic.
- Add milk, water, crushed cardamom pod and give a nice stir.
- Cover and pressure cook for 3 whistles.
- Heat a small pan, add a tbsp of ghee and roast the cashews and raisins until golden brown. Turn off the stove and keep them aside.
- Add the grated jaggery to the cooked cracked wheat and give a nice stir and let it cook on medium flame until jaggery is completely absorbed by the cracked wheat.
- Add in roasted nuts and raisins and tbsp of more ghee and serve warm.
Stovetop method
- Heat a wok, add a tbsp of ghee and roast the cashews and raisins until golden brown. Transfer them to a plate and keep aside.
- In the meanwhile heat a saucepan, add water, jaggery and let it come to a rolling boil and turn down the flame to medium.
- Now add in ¼ cup of ghee and roast the cracked wheat on medium flame until it turns golden brown and smells nutty and aromatic.
- Add in milk, water jaggery syrup, crushed cardamom pod and give everything a good mix and cook until the liquid is completely absorbed by the cracked wheat.
- Finally add in roasted cashews, raisins and serve warm.
Plant based version
- Heat a wok and dry roast the cashews until they turn golden brown, transfer them to a plate and keep aside.
- Now dry roast the cracked wheat in the wok on low flame until it has this nice nutty aroma and turns golden brown.
- Add in raisins, water, crushed cardamom, any plant based milk and cook until the liquids are completely absorbed by cracked wheat and then add in jaggery.
- Serve warm topped with nuts of your choice.
Notes
- You can use make this completely vegan by skipping out ghee and dry roasting, substitute the cracked wheat with quinoa and follow the plant based method above.
- You can add in more nuts like almonds, pistachios and make it more nutritious.
